Part of the Damon’s Restaurant & Hotel Group, Ethan’s was designed to specialise in Teppanyaki, a style of Japanese cuisine that uses an iron griddle to cook food. The word teppanyaki being derived from teppan, which means iron plate, and yaki, which means grilled, broiled or pan-fried.

As the food is prepared at individual cook-islands throughout the restaurant it was crucial that any solution met the challenging brief. Caswell were called on to design, manufacture and install bespoke kitchen & restaurant extract canopies to achieve:

  • Complete extraction of the by-products of cooking to protect fixtures, fittings, carpets and diners from smoke, cooking oils and odours
  • Control of desirable thermal and acoustic conditions within the new restaurant & kitchen
  • Aesthetically pleasing design to create the key focal point and dining experience
  • Compliance with all current legislation encompassing design best-practice

 

Caswell Project Manager, Ian McDonald and the team worked closely with Heronswood Director, Kevin Coupland from detailed M&E design stage onwards. The full HVAC specification and services provided by Caswell on this project includes:

Main Restaurant

  • Design, manufacture & installation of bespoke in-house designed Teppanyaki island canopies in Stainless-Steel fully welded construction, powder coated semi-gloss black and finished with polished stainless-steel surrounds with internal LED lighting
  • Design & installation of packaged Trane AHU unit with associated ductwork services and grilles
  • Insulation of supply & return ductwork with venture clad system externally
  • Installation of 6 Systemair MUB fans serving each individual canopy. Quiet and energy efficient EC-motors plus optimized blade and inlet cone geometry resulting in low SFP-value and ‘Green Ventilation’ symbol marking
  • Full system controls
  • Full commissioning service

Back of House Kitchen

  • Design, manufacture & installation of stainless steel wall mounted canopy
  • Installation of Mitsubishi heat pump AC cassette unit and external condenser
  • Installation of Systemair MUB extract fan unit


Ethan’s was opened in May 2017 to great acclaim in the locality, partly due to the inspiration of local charity hero, Ethan Maull.  Along with the ‘off-brand’ Restaurant name, it was decided to pay tribute to Ethan by using his favourite colour - green - to provide the vibrant LED lighting.
